Tasty Recipes For Your 4th of July All-American Cookout

Star-Spangled Burgers

Original recipe makes 8 servings

Ingredients

  • 2 lbs ground beef or ground turkey
  • 1 large red bell pepper
  • 2 cloves fresh garlic, minced
  • 1 tsp salt
  • 1 tsp ground black pepper
  • 2 (4 ounce) packages crumbled blue cheese
  • Choice of condiments

Directions

1. Preheat an outdoor grill for medium-high heat and lightly oil the grate.

  2. Mix ground beef, red pepper, garlic, salt, and pepper in a large mixing bowl; divide and form into 16 patties.

  3. Place 1 ounce blue cheese in the center atop each of 8 of the patties. Top each cheese-topped patty with an unadorned patty, pressing the sides together so the cheese doesn't fall out.

  4. Cook on the preheated grill until the burgers are cooked to your desired degree of doneness, 7 to 10 minutes per side for well done. An instant-read thermometer inserted into the meat should read 160 degrees F (70 degrees C).

Asparagus, Feta and Couscous Salad

Original recipe makes 4 servings

Ingredients

  • 2 cups couscous
  • 1 bunch fresh asparagus, trimmed and cut into 2-inch pieces
  • 8 ounces grape tomatoes, halved
  • 6 ounces feta cheese, crumbled
  • 3 tbs balsamic vinegar
  • 2 tbs extra-virgin olive oil
  • Black pepper to taste

 

Directions

  • Cook couscous according to package instructions. Put aside and allow to cool slightly.

  • Meanwhile, place asparagus in a steamer over 1 inch of boiling water, and cover. Cook until tender but still firm, about 2 to 6 minutes. Drain and cool.

  • Toss the asparagus, tomatoes, and feta with couscous. Add the olive oil, balsamic vinegar, and black pepper and toss to incorporate.

S’more Ice Cream Pie

Ingredients

  • 2/3 cup graham cracker crumbs
  • 2 tbs sugar
  • 3 tbs butter, melted
  • 2 ½ cups rocky road ice cream, softened
  • 2/3 cup marshmallow creme3/4 cup miniature marshmallows

Directions

1. Preheat oven to 325°. In a small bowl, combine cracker crumbs and sugar; stir in butter. Press onto bottom and up the sides of a 7-in. pie plate coated with cooking spray. Bake 7-9 minutes or until lightly browned. Cool on a wire rack.

2. Carefully spread ice cream into crust; freeze until firm. Spread marshmallow crème over ice crème. Top with marshmallows; gently press into crème. Cover and freeze 4 hours overnight.

3. Just before serving, broil 6 in. from the heat for 1-2 minutes or until marshmallows are golden brown. Yield: 4 servings.
