Make-Ahead Graduation Party Recipes

BBQ Chicken Sliders

Ingredients

BRINE:

  • 1-1/2 quarts water
  • ¼ cup packed brown sugar
  • 2 tbs salt
  • 1 tbs liquid smoke
  • 2 garlic cloves, minced
  • ½ tsp dried thyme

CHICKEN:

  • 2 lbs boneless skinless chicken breast halves
  • 1/3 cup liquid smoke
  • 1-1/2 cups hickory smoke-flavored barbeque sauce
  • 16 slider buns or dinner rolls, split and warmed

*** Double or tripple recipe depending on number of guests.

Directions

1. In a large bowl, mix brine ingredients, stirring to dissolve brown sugar. Reserve 1 cup brine for cooking chicken; cover and refrigerate.

2. Place chicken in a large sealable bag; add remaining brine. Seal bag, pressing out as much air as possible; turn to coat chicken. Place in a large bowl; refrigerate 18-24 hours, turning occasionally.

3. Remove chicken from brine and transfer to a 3-qt. slow cooker; discard brine in bag. Add reserved 1 cup brine and 1/3 cup liquid smoke to chicken. Cook, covered, on low 4-5 hours or until chicken is tender.

4. Remove chicken; cool slightly. Discard cooking juices. Shred chicken with two forks and return to slow cooker. Stir in barbeque sauce; heat through. Serve on buns. Yield: 8 servings.

Spectacular Overnight Slaw

Ingredients

  • 1 medium head of cabbage, shredded
  • 1 medium red onion, thinly sliced
  • ½ cup chopped green pepper
  • ½ cup chopped sweet red pepper           
  • ½ cup sliced pimiento-stuffed olives
  • ½ cup white wine vinegar
  • ½ cup canola oil
  • ½ cup sugar
  • 2 tsp Dijon mustard
  • 1 tsp each salt, celery seed and mustard seed.

Directions

In a large bowl, combine the cabbage, onion, peppers and olives. In a large saucepan, combine the remaining ingredients; bring to a boil. Cook and stir for 1 minute. Pour over vegetables and stir gently. Cover and refrigerate overnight. Mix well before serving

Grandpa’s Party Potatoes

Ingredients

  • 12 medium potatoes, peeled and quartered
  • 2 tbs butter
  • 2 tbs milk
  • ¾ tsp salt
  • ¼ tsp pepper
  • 1 package (8 ounces) cream cheese, softened
  • 1 carton (8 ounces) French onion dip
  • Paprika

*** Double or triple recipe based on number of guests.

Directions

1. Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes. Drain. Mash the potatoes with butter, milk, salt and pepper until smooth. Add cream cheese and onion dip; mix well.

2. Spread in a greased 2- ½- qt. baking dish. Sprinkle with paprika. Cover and refrigerate for 8 hours or overnight.

3. Remove from the refrigerator 30 minutes before baking. Bake, uncovered at 350 for 50-60 minutes or until heated through.
